My wife and I applied in London as Federal Skilled Workers a little over 2 years ago when her mother was ill. We had expected that by the time we got in (assuming we did), she wouldn't be around. However her mother has recovered somewhat and althought that's obviously good news, it scuppers our plans somewhat: she isn't well enough to visit us in Canada, so we can't go until she dies - and that could be another 2 or 3 years. Meanwhile our application has reached Documents Requested, so we could be given residency fairly soon. I know we have to prove residency for 3 out of 5 years so that would give us some space, but I'm nervous about eating into that and then not being able to leave Canada for 3 years - I want to be able to visit my family, for example.
Should we explain all this in a letter when we send the documents back and let immigration suggest a course of action, or would they just tell us we'd have to apply from scratch? (We were nearing 50 when we first applied so reapplying would reduce our points due to age.)

You can leave and re-enter Canada as much as you want as long as you accumulate 1095 days in a 5 year period as you stated in your post. That should give you plenty of opportunity to visit your family.
