I will be sending off my Spousal Sponsorship PR application in the next week or so, but was wondering how long (from the time of the initial application) it takes to receive an Open Work Permit? I'm in a bit of a bind as my Work Permit LMO application was rejected and have been working at my current job without a Work Permit for a month now.

What you are saying is that you are working without a valid work permit now? If so, then you don't want to do that. If CIC finds out about it, you can risk ever being allowed to immigrate to Canada.
Work without a work permit R186(u)—Implied status
R186(u) allows for persons to continue working under the conditions of an expired work permit, as long as they applied for a new work permit BEFORE THE ORIGINAL WORK PERMIT EXPIRED. Once the decision has been made, the client will either have to leave Canada or will continue as a worker who holds a valid work permit.
