Guys:
If you are using EAD and doing the job that your I-485 has been listed with, is it OK to do a second job that is not in the field that you have your I-485 filed under..???
Basically saying that as long as your Primary Job is same/similar to your I-485 filed application, you are OK to go ahead and find a second job which may be not in the same field ( specifically, not in IT).
Is this assumption accurate?

Yes. Technically, you can even don't have to work for a job that's listed in your LC as long as you have an employment agreement that will hire you permanently for the LC job after getting the GC.
