Because you and your spouse are two different and separate entities, it is perfectly possible one is cleared while the other is pending(irrespective of who is primary). USCIS does not always update the Last Updated Date column for each and every action taken.

The December 21 thing is their 'official' line. Meaning if your case is older than that date, you can raise a SR, this and that.

It usually comes after anytime between 4 to 8 weeks. But there are plenty of exceptions to this.

I think it is a must that your present employer does not revoke your I-140 before it is 180 days since you filed your I-485.

Really sorry to hear that. I have read somewhere else that people could write to the First Lady when faced with situation like yours. And there are cases that have beniftted from that.

USCIS says this at the bottom of the page there :

Your case may have a new "Last Updated" date and you may receive an Email Notification of your case being updated, without the status of the case changing. This is due to internal USCIS processing being performed on your Case. This will be reflected in the "Last Updated" date, but may not result in a different status message.
