Topic: Mailing Address on I-485 & AC-21 Issue

It's been about 70 days since I have applied for 485 and my EAD is on its way (Status: "Card Production Ordered"). I would like to change my job by end of this year, which I will be eligible to do so because it will be over 180 days by then.

Issues:
1. My current employer used a labor substitution for me and I don't have a copy of the approved labor cert. I also do not know the job title & the job description on that approved labor cert he used for me.
2. My current employer has used his business address on I-485 forms so that all communications re: my case are forwarded to him by the USCIS.

Questions:
1. How can I file for AC-21 and yet ensure that the job description & job title matches with that of my future job, without asking my employer?( I'm pretty sure that my employer will not be willing to give me the approved labor cert and also the I-140 approval notice.)
2. How can I change the address on I-485 form to my address and ensure all communications are routed to me from the USCIS after I file for AC-21?

My employer has done me a huge favor by giving me an approved labor with a old priority date. I completely acknowledge that favor. But at the same time, I feel like I'm exploited for money for the past 5 years and I shouldn't feel guilty about changing jobs at this time, but for some reason I'm extremely nervous about it and I also feel like I will end up being a big time opportunist, just like my employer if I end up changing jobs in the middle of my gc process. Pls advice as to what is the right solution for me at this time.

Thanks for your response in advance.
