My case was transferred to local office a couple of weeks ago, but i haven't got any LUD since the transfer. When can we expect letter for interview? How much time we have between getting the letter and the actual interview?

My status says:
This case has been sent to another office for processing because it has jurisdiction over the case.

On XXXXXXXXX, we transferred this I485 APPLICATION TO REGISTER PERMANENT RESIDENCE OR TO ADJUST STATUS to our XXXXXXXX location for processing because they now have jurisdiction over the case.

Recently my I-485 got transferred to local office. My I-140 is approved for a while and I-485 is pending for almost 18 months. What could be possible reasons?

Also, it got transferred to local office where my employer is. I live in another state.

Topic: Does contact of congressmen/senator with complaint filing to Ombudsman do adverse action on my 485?

I don't think contacting congressman/senator/ombudsman affect your case negatively.

I have also sent form 7001 to ombudsman and recently received a letter (2 months after me submitting the form) that they will look into the detail and contact USCIS. No idea when will they contact USCIS and what will happen from there.

Looking at your profile, your I-140 is approved and your I-485 is pending for more than 6 months. This allows you to use AC21 provision and keep working with a new employer using EAD/H1.

You can call them telling (lying) that you are the employer.. i know someone who has done that successfully several times.. If you tell USCIS that you are the employer inquiring about employee's I-140 issue, they will talk to you.
