Hi, I am currently on H1, but there's big chances I may get laid off soon with the current economic situation. I still got 1 more year on it. What happens if I do get laid off and I start using EAD? can I go back to my home country and get a new visa to re-enter o will I have to stay here until my I-485 is approved?

One option is to switch over to EAD, apply for advanced parole and travel abroad only after it's approval. Yes, you can always get a new H-1B stamped in your home country.
