Can I be without job (without salary/salary slips) on EAD?
If yes, then for how long?
I lost my job recently and looking for a new job and I am not certain when I would get a new job on EAD in the current market.
Please, advise.

yes, you could; for as long as your case is not adjudicated (you are on AOS, not EAD)
However, at any time you should have a prospective employer willing to hire you in similar occupation as in your PERM/I140 filing once you are adjudicated
